The points or stars awarded by five or six restaurant guides are incorporated in the calculation of the Volkenborn Rankings. These reviews are then converted into grades or marks as in the French school system. We continue to use the calculation matrix developed by Gustav Volkenborn with a few slight adjustments of our own.
